3 Tablespoons Shortening
1 1/2 Cups Rice
1/2 Cup Sliced Onion
1/2 Cup Sliced Bell Pepper
1 14 ounce can whole tomatoes
1 Clove Minced Garlic
1 Teaspoon Black Pepper
2 Teaspoon Salt
3 Cups Water
Method
+ Melt shortening in a large skillet
+ Add rice and cook until golden brown
+ Reduce heat and add onion, bell pepper, tomatoes, garlic, and pepper
+ Mix well and add just enough water to cover rice and add salt
+ Cover and simmer until water is absorbed
+ Add remaining cold water gradually, cooking on low until rice is fluffy
+ Serve hot
