8 Tortillas
2 Tablespoons Vegetable Oil
1 Minced Garlic Clove
1 Thinly Sliced Onion
1 Slivered Green or Red Pepper
1 Pound Beef Steak (Sirloin, Flank, or Round) Cut Into Thin Strips
or
1 Pound Boneless, Skinless Chicken Breasts Cut Into Strips
1 Tablespoon Chili Powder
1 Tablespoon Lime Juice
1 Tablespoon Chopped Pickled Jalapeno Peppers (optional)
1/2 Teaspoon Cumin
Toppings
Shredded Lettuce
Shredded Cheese
Salsa
Avocado
Sour Cream
Sliced Black Olives
Etc.
Method
+ Thoroughly cook meat of choice
+ Wrap tortillas in foil and bake at 350º until warmed or toss tortillas one at a time over a gas stove flame until warmed
+ In a large skillet heat 1 tablespoon oil over medium heat and add garlic, onion and pepper until tender then add meat and remaining ingredients
+ Serve hot over tortillas with desired toppings
