Ingredients

1/4 Cup Bacon Grease
2 Cups Shredded Meat of Choice
1 Diced Onion
2 Minced Garlic Cloves
2 Chopped Tomato
8 Ounces Diced Green Chiles
1 Boiled and Diced Large Potato
1 Teaspoon Salt
1 1/2 Teaspoon Oregano
1 Teaspoon Chile Powder
2 Tablespoons Minced Fresh Cilantro
12 Warmed Large Flour Tortillas
Vegetable Oil for frying
Toppings
Shredded Cheddar Cheese
Shredded Lettuce
Chopped Tomatoes
Sliced OIives
Sour Cream
Guacamole
Salsa

Method

+ Melt bacon grease in skillet
+ Saute meat, onion, garlic, tomatoes, potato and chiles until onion softens
+ Add salt, oregano, chili powder, and cilantro
+ Simmer for a few minutes
+ Place 1/2 cup meat per tortilla and fold up like an envelope
+ Brown in vegetable oil with seam side down until crispy then turn and brown other side
+ Place briefly on paper towel to absorb extra oil
+ Serve hot with toppings of choice
