1/2 Cup Yellow Cornmeal
4 Cups Hot Whole Milk
1/2 Cup Maple Syrup
1/4 Cup Light Molasses
2 Slightly Beaten Eggs
2 Tablespoons Melted Butter or Margarine
1/3 Cup Packed Brown Sugar
1 Teaspoon Salt
1/4 Teaspoons Cinnamon
3/4 Teaspoons Ginger
1/2 Cup Cold Whole Milk
Method
+ Heat 4 cups milk in double boiler
+ Gradually stir in cornmeal and cook over boiling water for 20 minutes, stirring occasionally
+ Preheat oven to 300º
+ Lightly grease 2 quart or 8 1/2" round baking dish
+ In small bowl combine all except cold milk of remaining ingredients
+ Stir into cornmeal mixture
+ Place cornmeal mixture into prepared baking dish
+ Pour cold milk over top without mixing
+ Bake uncovered for 2 hours, until set but quivery on top.
+ Let cool for 30 minutes
+ Serve warm with ice cream or light cream
